Fall flavors: Find the many faces of pumpkin in Tulsa restaurants

The many faces of pumpkin will be on display on doorsteps throughout the fall. The many faces of pumpkin also will be found among area restaurants from now through the holiday season.

Executive chef Audrey Long and pastry chef Madi Gurley of The Tavern and Bull in the Alley started thinking about coming up with a pumpkin-flavored fall dish a couple of weeks ago.

"We knew we had to do something for the fall," Long said. "For a lot of people, that's all about pumpkin and spices, and we started messing around with ideas.

"We thought about making pumpkin bread and using it in a French toast. Then we thought about what would go well with pumpkin bread and came up with maple crème anglais for something to jazz it up some.

"Then we thought we needed something crunchy, so we added a topping of pumpkin seeds in honey granola with oats and almonds."

The official result was pumpkin bread French toast with maple crème anglais and honey pepita granola, offered on The Tavern's brunch menu 11 a.m. to 3 p.m. Saturdays and Sundays through the fall. The Tavern is located at 201 N. Main St.

Long said it received a favorable reaction from the kitchen staff when she and Gurley were preparing it.

"They were saying, 'Oh, that smells so good. Can't wait to taste it.'"

We did taste it following a photo shoot, and it was luscious, all sweet and warm with a pumpkiny goodness.

Checking around town we found a variety of pumpkin-flavored dishes already being served this fall. They ranged from a sweet pumpkin doughnut to a savory pumpkin empanada to a must-have pumpkin spice latte.

Olive Garden has taken its basic pumpkin cheesecake and added a chocolate twist this year. That never hurts. The new dish includes pumpkin cheesecake topped with a layer of brownie bites and drizzled with chocolate fudge. The cake is baked on top of a chocolate cookie crust and filled with more brownie bites before it's served with whipped cream. Olive Garden calls it Chocolate Chunkin' Pumpkin Cheesecake.

It is a soft pretzel topped with a sweet cinnamon and sugar blend and stuffed with a pumpkin filling. Also look for pumpkin spice doughnut hole bunches, pumpkin muffins, pumpkin QuikShake, pumpkin twister (vanilla soft-serve with pumpkin syrup), pumpkin frappe, hot pumpkin latte, iced pumpkin latte and pumpkin-flavored cold brew.
